Wheat Berries

Wheat Berries

I made wheat berries for the first time today. I bought some on a whim on our last trip to Christina's, and I used them for a stir-fry of sorts for dinner tonight with carrots, CSA garlic scapes and arugula, and some mushrooms I found lurking in the crisper drawer. It was not my best work, so I ask you: what's your favorite recipe using wheat berries? Clearly I need a little guidance.

  1. Ok! When I make wheat berries (hard ones in my case), I just soak them & then cook in water at a 2 water: 1 grain ratio, like you'd cook any grain. Then I dress the wheat with a vinaigrette, and mix it with chopped vegetables of the green onion/red bell pepper/tomato/parsley variety. Feta/etc optional. Voila! Excellent grain salad!

  2. This http://www.101cookbooks.com/archives/whiskey-wheat-berry-salad-recipe.html is a fun one to play around with. I usually skip the raisins for dried cranberries or some diced apple, but the whiskey/adobo/goat cheese combo is a winner.
